Sounds Odd, Right? Turns out they're amazing, my mother in law has gluten allergies so I'm always striving to find new "goodies" to bake her so this was a perfect fit. And though this batch didn't even make it to their visit this weekend. Blame goes to the toddler who sneakily snatched the bag off the counter and indulged, I will say I wasn't extremely mad since I knew he was getting protein and fiber.
Black Bean Brownies
3 Eggs
3 Tbsp Vegetable Oil
5 Tbsp Cocoa Powder
1 Tsp Vanilla Extract
Pinch of Salt
3/4 C Sugar ( I used 1/2)
1/2 C Chocolate Chips
1/2 C Chopped Walnuts
&
1 Can (15.5 Oz) Black Beans - Rinsed
Preheat oven 350 F and lightly grease 9x9 baking pan.
1. Combine black beans, eggs, oil, cocoa powder, salt, vanilla extract, and sugar in a blender, blending until smooth.
2. Stir in chocolate chips and walnuts, then pour mixture into baking dish.
3. Bake for 25 minutes (or until top is "dry").
4. Enjoy. I've found them to be very chocolatey and my husband says they resemble "Passover Brownies"....I might be assuming but I'm pretty sure black beans aren't involved in mentioned brownies.
I've heard these are awesome; just need to watch the fiber intake. :)
I just tried this recipe today! I have been wanting to try black bean brownies, so thanks for sharing. I'm on the fence...they are good, but definitely not a seamless swap for the real deal! :)
