I know I've said this before about some of the recipes I've posted in the past, but I just have to reiterate that it just baffles me that the recipes I thought were complicated and not so do-able, turn out to be the easiest. Take these macaroons for instance, I love cocoanut, love, but never thought to look into making macaroons because I "assumed" they'd be difficult, ha, was I wrong! This was such a simple, no fuss, delicious concoction.
Macaroons
1 C Flaked Cocoanut
2 Egg Whites
1 C Powdered Sugar
2 Tsp. Vanilla Extract
Preheat oven to 350˚
Combine Egg Whites, Vanilla and Sugar in bowl, and mix.
Add Cocoanut flakes.
Make small cocoanut balls (if you want more precise 'balls', chop cocoanut flakes before adding to mixture) and set on cookie sheet.
Bake 20 minutes or until slightly golden brown. Dip in chocolate if you'd like and enjoy!
