Breakfast is kind of a thing in this house, we take it pretty seriously. As we should, it's the most important meal of the day. Now I'm not usually the one to concoct these fabulously made meals, I leave the eggs and waffles to my well skilled husband. However, when it comes to the creative recipes like my baked oatmeal, I have no problem stepping in and giving him a break. Last week I did just that with my newest favorite blueberry (or any berry) baked french toast. A baguette sliced, placed in a 13x9, soaked in eggs overnight and baked to perfectly crispy goodness. It's heaven for your taste buds and secretly packed with protein, and some of those other healthy things like you know, bread.
Try it, you'll love me FOREVER. Also, I won't judge you for using gluten free bread.
Blueberry Baked French Toast
1 Crusty Baguette Or French Bread - Cut into 1/2-1in thick slices
1 Cup Of Blueberries, or any berry fresh or frozen
1 Tsp. Almond Extract (also known as my new BFF & the secret ingredient)
1 Tsp. Vanilla Extract
1 Tsp. Cinnamon
1/4 Cup of Milk
1-2 Tbsp. Honey
3-4 Eggs
Preheat Oven to 375˚
Arrange slices on a greased 13x9 pan (you might need an extra pan, this is my "extra pan").
Combine Eggs, Milk, Honey, Extracts and Cinnamon in bowl.
Pour evenly over slices, and top with blueberries. Refrigerate overnight (or for at least a 1/2 if you're in a hurry...)
Bake 15-20 mins or until bread gets a little crispy and voila!
