Last weekend, on the night before Valentine's day I racked my brain on what I was going to get for my husband for the occasion. I narrowed it down to baking since that's something he would more than likely enjoy the most. However, being that it was close to closing time to most of the stores in the area I had limited resources to bake something fabulous, or so I thought. Little did I know that I actually had everything I needed after seeing a lonely box of unsweetened cocoa sulking in the corner of my fridge. Alas, chocolate cupcakes ( I know, I know - chocolate again)
Perfect Chocolate Cupcakes (30 Cupcakes)
2 C Sugar
1 3/4 C All Purpose Flour
3/4 C Unsweetened Cocoa
1 1/2 Tsp. Baking Powder
1 1/2 Tsp. Baking Soda
1 Tsp. Salt
2 Eggs
1 C Milk
1/2 C Vegetable Oil
2 Tsp. Vanilla Extract
1 C Boiling Water
-Preheat Oven to 350F -
Line 2 1/2 inch muffin cups with paper baking cups (less mess!). Combine dry ingredients in a large bowl, mix, add eggs, milk, oil and vanilla. Beat on medium speed for 2 mins. Stir in boiling water - batter will be thin.
Pour into baking cups to 2/3 full and bake for 22-25 mins (or until toothpick comes out clean). Cool Completely and top with Chocolate Frosting - recipe below.
Chocolate Frosting
1 Stick (1/2 C) Butter
2/3 C Unsweetened Cocoa
2 1/2 C Powdered Sugar
1/3 C Milk
1 Tsp. Vanilla Extract
Melt Butter, Stir in Cocoa. Alternately add powdered sugar and milk, beating on medium speed to spreading consistency (adding more milk, if needed). Stir in vanilla - makes about 2 cups. Enjoy ;)
does it have to be cupcakes, I've only got a cake pan....
yes, just cook for 15-20 mins longer and check with tooth pick.
