In honor of our son's 2nd birthday party yesterday I whipped up some vanilla cupcakes to coincide with the ah-mazing chocolate cocoanut cake my mom made for the party.
Vanilla Cupcakes
2 cups sugar
4 eggs
2-1/2 cups all-purpose flour
1 cup milk
3/4 cup vegetable oil
2-1/4 teaspoons baking powder
1 teaspoon vanilla
In a large mixing bowl, with an electric mixer, beat sugar and eggs together until slightly thickened, about 1 minute. Add flour, milk, oil, baking powder, and vanilla and beat for another minute, just until the batter is smooth and creamy. Don't overbeat.
Pour batter into the prepared baking pan. Bake for 20-25 mins or until toothpick comes out clean. Let cool thoroughly before frosting.
I topped my cupcakes with whipped cream and fresh berries for a healthier take on the cupcake, though take note - freeze the cupcakes topped with the whipped cream and then put berries on when serving, to avoid a melting mishap ;).
THAT is one of the most beautiful children I have ever seen. So. Stinkin'. Cute.
