As a kid popsicles were a frequent summer snack, whether they were of the sugar filled boxed variety or homemade 'juice' pops my mom and I would make, they would always hit the spot by cooling us down after a long day of playing outside.
And now that I'm older the box variety doesn't quite have the same ring to it as it did during my childhood (my assumption is that I can read and understand the ingredients and I don't like what I see), forcing me to branch out to new ideas...like making my own popsicles...that are delightful and pretty too.
My initial thought was homemade 'fruit' rainbow pops, which I like to call Fruit Salad pops because they're made of pureed fruit and very little (or none in my case) sugar. First up was Strawberry + Blueberry...
Strawberry & Blueberry Layered Pops - Serves 8
1 Cup Blueberries
1 1/2 Cups Strawberries, Halved
2 Tsp. Sugar (optional)
1/2 Cup Water
Mix the blueberries and 1/4 cup of water in blender to puree (add tsp of sugar if desired), put mixture to the side and repeat with strawberries and remaining water.
Next, pour the blueberry mix in to popsicle holder filling 1/2 way, freeze for 20 mins.
After the blueberry mixture has hardened fill the remaining half with the strawberry mixture...
Add sticks and freeze for 2 hours, or until entirely frozen
(plastic cups and stick can be used instead of the holders, just be sure to place stick in after 1/2 way frozen)
Run holders under warm water to loosen the pops, and enjoy!
Or Try...
Pineapple, Orange, and Strawberry
1/2 Cup Chopped Pineapple (Fresh or Canned)
1/4 Cup Orange Juice
1/2 Cup Halved Strawberries
1/4 Cup Water
Puree Pineapple with 1/8 cup of water, then fill the 'cup' 1/3 (I went a little over). Freeze for 20 mins, and then add the Orange juice to the other 1/3 of the cup. Freeze Again for at least 20 mins, then top off with Strawberry mixture (pureed with 1/8 water). Wait a few hours and Voila!

Looks like a wonderful summer treat!! My mom used to make these (although, not with fresh, blended fruit...probably Kool-Aid) and I remember them so fondly!
YUM! These remind me of those Edy's fruit bars which, though delicious, cost $285426462 for like four of them. No thank you. I love the taste of real fruit without all the sugar added in - these are perfect!!
