If only Florida could make up it's mind about the weather, some days it's in the 60's and somedays it's back up to 80, let me tell you how happy I will be when I move back to a place that has all four seasons. But in the meantime it's cool enough to indulge in one of my favorite cold weather treats, hot cocoa, and since most boxed varieties aren't so great for you I always end up making my own. Add a few warm cookies and we're really talking...
Simply Hot Cocoa - Serves 2
2 Cups Milk
1/3 Cup Unsweetened Cocoa Powder
1/3 Cup Mini Marshmallows
1/8 Teaspoon Cinnamon
1/4 C Sugar
Pinch of Salt
Whipped Cream - Optional
Whisk Milk, Cocoa, Cinnamon, Sugar and Salt together in a Small/Medium Saucepan. Cook over Medium heat stirring constantly until thoroughly heated, don't let boil.
Add marshmallows, and simmer for 1-2 minutes stirring constantly until marshmallows are melted.
Remove from heat and serve immediately, top with whipped cream and a dash of cinnamon.
Enjoy.

Oh definitely trying this out! I can never finish the ones that are in the little packets- they just don't taste right! This recipes looks perfect :)

Ahh yummy yummyyy! I know what you mean about the weather. We barely get a few rainy days during "winter" in Honduras, but when we do hot choco is the way to go. :D
