Like chicken broth, vegetable broth can be used in any number of ways and makes an appearance at least once a week in our household, whether it's in soup, potatoes, or even stir fry. So of course, we go through it pretty often which gets pricey because I have to buy, like other things, organic (I'm allergic to MSG). And what better way to cut costs than make it yourself, right? Simple, fresh and delicious.
Homemade Organic Vegetable Broth - Makes 64 oz.
1 Tomato, Cubed
1/2 Onion, Sliced/Diced
2 Leeks, Sliced
2 Stalks Celery, Sliced
1 Carrot, Sliced
1 Tbsp. Minced Garlic
5 Cups Water
1 Tbsp. Italian Seasoning - Oregano, Sage, Marjoram, Basil, Parsley
1 Tbsp. Sea Salt
Add all ingredients into large saucepan...
Boil for 8 minutes and let simmer for 15, removed from heat and strain.
Let cool and put in storage containers (for up to 10 days), or use immediately, I made Minestrone soup.
