Memorial Day is among us, which means it's time to kick off grilling season! And with that in mind I've been searching for more summer and grill friendly sides, one that popped in my head was roasted potatoes and broccoli. I know it sounds strange, well the broccoli part, but take my word on it. The crispy, slightly buttery broccoli taste is one of those things you'll be begging to see a lot more of. After first trying it at my grandfather's when we were there in August, I immediately got hooked, but it wasn't until recently that I tried a hand at it. Now the whole family is hooked, in laws included!
Roasted Broccoli and Potatoes (Serves 4)
1-2 Stalks of Broccoli - Cut into bite size pieces
5 Petite Red Potatoes - Quartered
2-3 Tbsp. Olive or Grapeseed Oil
1 Tbsp. Garlic Powder
3/4 Tsp. Salt
1 Tbsp. Italian Seasoning (or just Oregano)
Preheat Oven to 375˚
1. Combine potato and broccoli pieces in large mixing bowl, add oil, garlic and italian seasoning.
2. Toss until completely covered in oil and spice mixture.
3. On a baking sheet add a thin layer of the mixture and bake for 12-18mins, or until browned. Remove and let cool.
4. Enjoy with Grilled BBQ Chicken or Steak.

i'm obsessed with roasted veggies, especially broccoli! sometimes i just drizzle some olive oil with a pinch of salt and sugar then cook 'em. my kids love it and so do i. yummy! this recipe sounds especially flavorful!

Have to say this is something my mom did every week also-- or variations. I think this is why I loved baked and steamed veggies!
