For me Kale is a hard veggie to like, I've been known to eat it in two forms and only two forms, Smoothie/Juice or made into chips, there's just something about that bitter flavor that doesn't get me excited. However, I'm always willing to try new ways to give it a shot, only because, you know, it's so good for me. So when I saw a recipe card in the produce department of my grocery store I was intrigued by the possibility of a new dish. It took me a few months to actually get around to taking a stab at the overly simple recipe, but seeing that I've made it twice this week I kind of wish I'd done it sooner...
And while soup isn't a must have for summer I found it was actually extremely refreshing with a nice creamy texture. As for the Kale it's like butter, it's rich and full flavor, so it looks like a I found my new favorite...
Caldo Verde
(serves 8)
2+ Heaping Cups Of Kale
32oz Container of Chicken Broth
3 Chicken Sausage Links (Casing Removed)
2-3 Large Potatoes, Chopped
A Sprinkle Of Salt, Pepper, and Garlic Powder
Brown the sausage in a medium to large sauce pan.
Add broth & potatoes, cook on medium low for about 20 minutes or until potatoes are tender. Stir in Kale and simmer for another 10 minutes or until Kale is wilted and potatoes are soft.
Voila! Caldo Verde
So rare to find a recipe that has all ingredients I might like. Not that I'm a picky eater. But this one sounds yummy. Usually any kale in my house is for the guinea pigs :)

I didn't even know the word "Kale" before I figured from the photos :) Looks yummy!
I think the original caldo verde started as a Portuguese soup...I'm from a huge Portugese community (but not one myself) and they loooove kale. My dad and SIL make two of the best kale soups! imo kale > spinach in soups! Can't wait to try it with chicken sausage- healthier!!

This looks super tasty, I'm a big soup person regardless of the season so I will definitely give this recipe a try. I'm not the best cook (yet!) so the simple recipe should work well for me.
