Now that wedding season is upon us, it means it’s time to round up our best girlfriends to celebrate their upcoming nuptials. We all love bachelorette parties for the sake of sipping on a few cocktails, playing a silly game or two, and laughing the night away. While not all get togethers are spent dancing until all hours, most of us can agree that some kind of treats are in order. Am I right?
So to go alongside the new Smirnoff Sorbet Light line I opted to whip something special up using the Sorbet Light Lemon, just in time for bachelorette party season!
For me cupcakes are kind of a weakness, I often find myself stirring up new flavors and playing with ingredients so when I got the idea to adapt my Buttercream Frosting with the Smirnoff Sorbet Light Lemon there was no turning back. I had no idea that switching out and adding new flavors would be one of the best choices I’ve made all summer. You’ll be sure to win over anyone who tries them, with minimal effort at that. It’s the perfect light and airy twist to one of our classic favorites.
With that being said, let’s whip up some Lemon Sorbet Vodka Buttercream Frosting.
Here’s What you need...
1 Stick of Butter (Softened)
2 Cups of Confectioners Sugar
A Pinch of Salt
2 Tsp. Smirnoff Light Lemon Sorbet
Zest of A Lemon
With a handheld electric (or stand up) mixer cream the butter in a medium sized mixing bowl.
Gradually add sugar and salt, mixing until light and fluffy (you might not need all of the sugar).
Stir in fresh lemon zest (about a tsp.).
Then the vodka. Mix. If it becomes runny add more sugar to thicken it up.
Voila!
Now frost your cupcakes (I opted for mini vanilla cupcakes so the lemon could steal the show.) And sprinkle with extra zest serving alongside your favorite Smirnoff Sorbet Light Martini.
(Yields 12-13 Mini Cupcakes)
