I'm a snacker, I spend most of the day grazing on little snacks here and there. And while I'd love to say it's always on the most healthy items (though I stand by my reasoning with organic chocolate chip cookies) it would probably be a lie. So, when I found my self feeling ready for a snack last week I checked the fridge for some healthier and filling alternatives to say, pumpkin pie. I grabbed an avocado, some black beans and a red pepper, tossed it in some olive and threw on some garlic, Voila! Now, I know this isn't so Fall savvy but it'll make you wish it were summer again.
Black Bean and Avocado Salad
1 Green Avocado
1 Cup Of Black Beans
1/2 Cup Chopped Red Pepper
1 Tsp. Garlic Powder
1-2 Tbsp. Olive Oil
Salt and Pepper to taste
Combine all the ingredients and toss with Olive Oil, Garlic, Salt and Pepper. Serve Chilled.
